Three Recipes With Chestnuts – Autumn Inspired Cooking

Baking With Chestnuts

Ingredients:

1,5 cup flour

1,5 cup sugar

1 table spoon baking soda

1 table spoon baking powder

a pinch of salt

1 cup chestnuts mashed

1 spoon vinegar in 1 cup milk

0,5 cup oil

2 spoons vegan egg replacement

0,3 l to 0,4l whipping cream

100 g ground sugar

First very simple baking of a chestnut biscuit. Firstly separatelly mix the dry and wet igredients. After that you can mix dry and wet to make a perfect mixture. So you can now bake immediatelly on 160 C for 25min. But I am doing something different. After mixing and stiring I leave the mixture to stay and become more consistent and textured. After the biscuit is baked, leave it to cool down completely. At this step you can decide if you want to do a vegan option or convencional. For the vegan option use Coconut Whipping cream or use normal whipping cream. Spread around the biscuit and sprinkle some chocolate crumbs or cocoa. Put in the fridge for at least two hours or more.

Quick Dessert In A Glass

Second recipe is a quick one if you buy already cooked and peeled chestnuts. It’s so easy, just mix the first ingredients together. Separately whip the cream and then add to the mixture. Optional: use a vegan coconut whipping cream and recipe becomes vegan approved. For the frosting also whip the cream and spread on the top and sprinkle with cocoa. You can make thid dessert in a glass or in a glass bowl.

Ingredients:

300 g cooked and peeled chestnuts

one spoon chocolate spread

1 spoon cocoa powder

1 spoon of rum for baking or Bailey’s liquor

200-300 g whipping cream

For the frosting:

a few whole chectnuts to garnish on the top

cocoa powder

200-300 g whipping cream

Soup With Chestnuts

Third recipe was actually my boyfriends idea and it was great. I was so happy with the end result that I needed to share it with you. Recipe is for chestnut soup. Firstly, fry the garlic and spice on a low to medium heat for ten minutes. Then add a one to two cups of cooked and peeled chestnuts and keep frying and stiring for another ten minutes. Meanwhile dissolve a veggie cube in half liter water or use veggie broth. After ten minutes pour the sop base into pan and boil for 20 minutes. Because of the chestnuts it will become creamy, so to enhance that add one can of coconut milk. Blend to smooth consistency and boil for another 20 minutes.

Ingredients:

spices: parsley, salt, black pepper

olive oil

2-3 cloves garlic

1-2 cups cooked and peeled chestnuts

veggie broth or veggie cube in warm water

 a can of coconut milk/ 400 ml
