Last week I prepared a quick dessert. I wanted to use a Dr. Oetker Jafa Pudding Mix and make a three layer dessert cake. I love preparing home made desserts, because you can experiment a lot. So in this dessert I made three layers, each at different time, because each of the layer needs to be cooled down, before adding a new one.
For the first layer you’ll need:
1 cup flour
1 cup sugar
2 spoons egg replacement
1 spoon baking soda
1 spoon baking powder
a pinch of salt
Mix all the dry ingridients together and wet separatelly.
1 cup oat milk with 1 spoon vinegar
5 spoons oil with 2 spoons of rum for baking
Stir everything together. Leave to sit for ten minutes and then stir again and put on baking tray. Bake for about 25 minutes on 160 °C. When is baked, leave it to cool down.
I’ll be using a Dr.Oetker mixture for pudding layer. But you can make normal or vegan pudding, And you can also use different taste of pudding if you prefer. My tip on this step would be next one: If you’re using vegetable milk, use 10-15% less milk than stated on pudding label, because it’s less dense and it can effect the thickness of the pudding.
For this Dr. Oetker Jafa Mix you’ll need to mix it in 0,1l of cold milk separatelly. In a different pan boil the 0,5l vegetable milk with 100g of ground sugar. When the milk is boiling add the cold mixture. Stir entire 5 min. Two minutes boil and then stir on a low heat. When it gets heavy and thick, layer it on a pre-baked biscuit. Put in the fridge for at least one hour or more.
Finally the third layer, it’s quick and easy to make. But you’ll need to wait for a few hours more. Into 0,3l-0,4l whipping cream add 100g of ground sugar and whip. If your doing it vegan use coconut whipping cream.
