How to make a delicious veggie soup?!
Today we are doing a little bit of healthy cooking. I am all about veggies. Home grown organic veggies which are so healthy for our bodies. They contain a lot of essential minerals, proteins and vitamins. The best veggies that I get here where I live, are from my grandmother and from my mother in law. Moreover, they grow all sort of veggies on their gardens and do not use any chemicals.
Firstly, there are few ingredients that you need to have:
Himalayan salt, olive oil, garlic, onions, nutmeg, pepper, sweet paprika, tomato paste, vegetable broth or cube.
But you can also use different spices, the ones that you preffer.
Secondly, for the taste choose you’re favourite vegetables or the ones that are in season:
..broccoli, carrots, leak, cauliflower, fennel, turnip, cabbage, kale, mushrooms, tomatoes, potatoes..
How to make veggie Soup – The Recipe:
First you will need to chop onions and garlic. In a large pan pour six table spoons of olive oil. When the oil is hot put the onions and garlic in it. Add spices (one tea spoon each) and stir. Fry on a medium heat for about ten minutes. Then add tomato paste, two table spoons. Pour 1,5 litre of water and add your favourite veggies. Stir and mix everything together. After you’ve done that, leave it on high heat to boil more then half hour. After that taste the soup if needs more salt or more water. Stir and leave to boil again for 10 minutes on medium heat. Instead of water you can use vegetable stock or besides water you can add a vegetable cube for more taste.
We like to keep it plain and simple to get the taste of the veggies instead of salt. Also you can add many different foods in the soup. For more fulfilling taste add rice or pasta in the middle, or lentils at the beginning of boiling.
